Ripening times vary with each variety and Mother Nature’s timing. ## Apple Varieties We Grow From the first crisp bite of September to the storage favourites that last through March, here’s what you’ll find at our market table. Sweet & Crisp ### Eating Apples Our most popular varieties, straight from the tree to the basket. #### Honey Crisp Sept, Mar Exceptionally crisp, juicy, and sweet with a hint of tartness. Keeps fresh for a long time. #### Royal Gala Sept, Feb Average size with yellow-orange colour and a red blush. Sweet flavour, ideal for eating fresh. #### Ambrosia Oct, Mar A large red apple that is crisp and juicy with a distinct aroma and a sweet, low-acid profile. #### Crimson Crisp Mid-Sept, Feb Vividly red, with a very crisp texture and firm, almost hard flesh. A complex, spicy flavour that pleases tart apple lovers, excellent for fresh eating and storing. Heritage & Baking ### Versatile Apples For pies, sauces, snacking, and everything in between. #### Salish Oct, Apr Originating from B.C., Salish is crisp, juicy, and has a tangy, sweet-tart flavour often described as fruit punch. Medium-sized with red-yellow skin, ideal for fresh eating, baking, and salads. #### Russet Oct, Jan One of the oldest Ontario varieties.
